| This Non Vintage Pinot Noir –
Chardonnay classic blend has elegance and finesse
, paramount for high quality sparkling white wine
of this type, which is a result of the all important
balance and flavour, acidity, mouth feel with the
effective use of yeasts. The Pinot Pink tinge with
aged Chardonnay gives the coppery tones to this
superb wine. Apricot nougat aromas are subtle. The
dry acid finish with the smooth creamy palate leaves
a lingering honey – biscuit character. |

This 2005 D3/ v14 Adelaide
Hills Merlot clone that was matured in fine
grain new French oak. It is opulent, touched
with rich aromas and flavours of plums, violets,
chocolate and olives. These complexities expand
on the palate giving great reward, with Plummy
fruit both in bouquet and on the palate. The
soft vinous characters are balanced by the
judicious use of new French oak.

season certainly favoured the Pinot Noir grapes
from our selected, well-drained site in the
Adelaide Hills. An extremely approachable
medium bodied wine that is developing the
gamey truffle flavours and sweetness that
will be enhanced with careful cellaring. Rich
primary fruit characters are still flirting
with soft velvety tannin that finishes soft
and sleek further enhanced by the moderate
use of fine grain French oak. Gamey and forest
floor characters will develop further. Drink
